21. PECAN CRUSTED SALMON

 

  • PREP TIME: 5 minutes
  • COOK TIME: 20 minutes

INGREDIENTS

  • 2 pounds salmon filets
  • 3 tablespoons chopped pecans (salted or unsalted)
  • 1/4 cup parsley, chopped
  • 1 cloves garlic, minced
  • Zest of 1 lemon
  • 2 tablespoons olive oil
  • Salt & pepper

INSTRUCTIONS

  1. Preheat oven to 350°F (180°C).
  2. In a small bowl, combine pecans, parsley, garlic and lemon zest with olive oil.
  3. Season the salmon filets liberally with salt and pepper.
